Ingredients
  

Main Ingredients:

  • 1 lb boneless, skinless chicken breasts or thighs (or 2 cups cooked, shredded chicken)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans or pinto beans, drained and rinsed
  • 1 (15 oz) can corn, drained (or 1 cup frozen/fresh corn)
  • 1 (15 oz) can diced tomatoes with green chilies (such as Rotel)
  • 3 cups low-sodium chicken broth (adjust based on desired thickness)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet (or 2 tbsp) taco seasoning (store-bought or homemade)
  • 1 tsp chili powder (optional, for extra heat)
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • 1 tbsp olive oil (if cooking on the stovetop)

Optional Add-Ins for Extra Flavor:

  • ½ cup tomato sauce or tomato paste – for a richer broth
