Ingredients
  

  • 2 lbs beef roast top round or eye of round
  • 2 tbsp olive oil
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard

Instructions
 

Prep the Beef:

  • Preheat the oven to 275°F (135°C).
  • Pat the beef roast dry with paper towels.
  • In a small bowl, mix salt, pepper, smoked paprika, garlic powder, onion powder, thyme, and oregano.

Season and Marinate:

  • Rub the beef with olive oil, Worcestershire sauce, and Dijon mustard.
  • Evenly coat with the spice mixture, pressing it into the meat for better adhesion.
  • Let it marinate for at least 30 minutes (or overnight for deeper flavor).

Roast the Beef:

  • Place the beef on a roasting rack over a baking sheet.
  • Roast for 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare or 145°F (63°C) for medium.
  • Remove from the oven and let it rest for 20 minutes before slicing.

Chill and Slice:

  • Wrap the roast in foil and refrigerate for at least 4 hours or overnight to firm up.
  • Use a sharp knife or deli slicer to cut thin slices.

Store and Serve:

  • Store in an airtight container in the fridge for up to 5 days or freeze for longer storage.
  • Serve in sandwiches, wraps, or salads!
