- 2 lbs beef roast top round or eye of round
- 2 tbsp olive oil
- 1 tbsp salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp dried thyme
- ½ tsp dried oregano
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
Prep the Beef:
Preheat the oven to 275°F (135°C).
Pat the beef roast dry with paper towels.
In a small bowl, mix salt, pepper, smoked paprika, garlic powder, onion powder, thyme, and oregano.
Season and Marinate:
Rub the beef with olive oil, Worcestershire sauce, and Dijon mustard.
Evenly coat with the spice mixture, pressing it into the meat for better adhesion.
Let it marinate for at least 30 minutes (or overnight for deeper flavor).
Roast the Beef:
Place the beef on a roasting rack over a baking sheet.
