Ingredients
  

  • 8 lamb lollipops frenched lamb chops
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon butter optional
  • Lemon zest for garnish (optional)

Instructions
 

  • Allow lamb chops to sit at room temperature for 30 minutes before cooking. Pat dry and season generously with sea salt and black pepper.
  • Heat olive oil in a skillet over medium-high heat until shimmering.
  • Add lamb chops carefully, searing for about 3–4 minutes per side until golden and crisp.
  • In the last minute of cooking, add butter, garlic, and rosemary to the pan. Gently spoon the flavorful melted butter over the chops.
  • Remove the lamb lollipops from heat and let them rest for 5 minutes before serving. Garnish with fresh lemon zest if desired.
