Ingredients
  

  • 4 boneless skinless chicken breasts (pounded to even thickness if needed)
  • ½ cup freshly grated Parmesan cheese
  • ½ cup panko breadcrumbs or regular breadcrumbs
  • 2 tablespoons Greek yogurt or mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning plus more to taste
  • 1 tablespoon olive oil or cooking spray
  • Salt and pepper to taste

Instructions
 

  • Preheat the Oven
  • Set your oven to 400°F (200°C). Lightly grease a baking dish or line it with foil for easier cleanup.
  • Prepare the Chicken
  • Pat the chicken breasts dry with a paper towel. If desired, marinate them briefly in a simple mix of olive oil, lemon juice, and extra Italian seasoning to boost flavor.
  • Make the Coating
  • In a shallow dish, stir together the Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper. In a separate dish, place the Greek yogurt (or mayo).
  • Coat the Chicken
  • Dip each chicken breast into the yogurt or mayo to help the crust stick, then press it into the Parmesan mixture. Make sure each piece is evenly coated on all sides.
  • Bake to Perfection
  • Place the coated chicken in your prepared baking dish. Bake for about 20 minutes or until the crust is golden brown and the internal temperature reaches 165°F (74°C). Let the chicken rest a few minutes before serving so it remains juicy.
