Ingredients
  

  • Lamb Chops: 8 (rib or loin chops, about 1-inch thick)
  • Olive Oil: 2 tbsp (for moisture and flavor)
  • Garlic: 3 cloves, minced (adds depth)
  • Fresh Rosemary: 1 tbsp, chopped (or 1 tsp dried)
  • Fresh Thyme: 1 tsp, chopped (or ½ tsp dried)
  • Paprika: ½ tsp (for mild heat and color)
  • Salt & Black Pepper: To taste
  • Lemon Juice: 1 tbsp (for brightness)

Optional Garnish:

  • Lemon wedges
  • Chopped parsley
  • Crushed red pepper flakes (for extra heat)

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or lightly grease a baking dish.

Step 2: Prepare the Lamb Chops

  • Pat the lamb chops dry with paper towels to remove excess moisture.
  • In a small bowl, mix olive oil, garlic, rosemary, thyme, paprika, salt, and black pepper to create a marinade.

Step 3: Season & Marinate

  • Rub the seasoning mix evenly over the lamb chops.
  • Let them marinate for at least 15 minutes (or up to 2 hours for deeper flavor).

Step 4: Bake the Lamb Chops

  • Arrange the chops in a single layer on the prepared baking dish.
  • Bake for 12-15 minutes, depending on your desired doneness:
    Rare: 125°F (52°C)
    Medium-Rare: 130°F (54°C)
    Medium: 135°F (57°C)
    Well-Done: 155°F (68°C)

Step 5: Rest & Serve

  • Remove from the oven and let the lamb rest for 5 minutes to retain juices.
  • Drizzle with lemon juice and garnish with parsley or red pepper flakes if desired.
