Ingredients

  • 3 cups all-purpose flour
  • 1 cup active sourdough starter or sourdough discard
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 tbsp baking powder
  • ½ cup warm milk whole or 2%
  • ¼ cup unsalted butter melted
  • 1 large egg

Instructions

Step 1: Preheat and Prepare

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a baking dish.

Step 2: Mix Dry Ingredients

  • In a large mixing bowl, whisk together flour, sugar, salt, and baking powder.

Step 3: Combine Wet Ingredients

  • In another bowl, mix sourdough starter, warm milk, melted butter, and egg until well combined.

Step 4: Form the Dough

  • Gradually add the wet ingredients to the dry ingredients and mix until a soft dough forms. If it's too sticky, add a little more flour (1 tbsp at a time). Knead the dough lightly until smooth.

Step 5: Shape the Rolls

  • Divide the dough into 12 equal portions and roll them into smooth balls. Place them close together in a baking dish or on a parchment-lined sheet.

Step 6: (Optional) Proof for Extra Softness

  • For extra fluffy rolls, cover them with a damp towel and let them proof at room temperature for 30-60 minutes. If you’re short on time, you can skip this step.

Step 7: Bake

  • Bake for 18-20 minutes, or until the rolls are golden brown on top and sound hollow when tapped on the bottom.

Step 8: Serve

  • Let the rolls cool slightly, then brush with melted butter for an extra soft, glossy finish. Serve warm and enjoy!
