These sourdough discard rolls are soft, fluffy, and packed with rich, tangy flavor. A great way to use up sourdough discard, these rolls are perfect for any meal—whether as dinner rolls, sandwich buns, or a snack with butter.

Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 cup sourdough discard unfed
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • ½ tsp salt
  • ½ cup milk whole or 2%
  • ¼ cup unsalted butter melted
  • 1 large egg

Instructions
 

Step 1: Preheat and Prepare

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2: Mix Dry Ingredients

  • In a large mixing bowl, whisk together flour, baking powder, sugar, and salt.

Step 3: Add Wet Ingredients

  • In a separate bowl, mix sourdough discard, milk, melted butter, and egg until well combined.

Step 4: Form the Dough

  • Gradually pour the wet mixture into the dry ingredients and stir until a soft dough forms. If it's too sticky, add a little more flour (1 tbsp at a time).

Step 5: Shape the Rolls

  • Divide the dough into 10 equal portions and roll each into a ball. Place them on the prepared baking sheet 1 inch apart.

Step 6: Bake

  • Bake for 18-20 minutes, or until the rolls are golden brown and a toothpick inserted into the center comes out clean.

Step 7: Serve

  • Let them cool for a few minutes before serving. Brush with extra melted butter for a richer flavor!
